Hilton Kuching Wins The Dato Lau Foo Sun Excellence in Dining Award for 2018/2019

The prestigious award was named by the founder Bailli Delegue, President of the Chaine des Rotisseurs’ Malaysia Chapter

Hilton Kuching has won the Dato Lau Foo Sun Excellence Dining Award for 2018/2019 by The Chaine des Rotisseurs’ Malaysia Chapter in recognition of its culinary excellence. With a wide range of restaurants and bars ranging from the award-winning Steakhouse and interesting cocktail concoctions at Senso bar to delectable Chinese cuisine with an eclectic mix of Sarawak-inspired Cantonese flavours at Toh Yuen, the five-star hotel’s dining selections offer the very best in quality and service to first-time and returning patrons.

Named after the late Dato Lau Foo Sun who served as the society’s president for 25 years, judging was based on criteria such as pre-dinner experience, menu selections, wine and food presentation, service, ambience and venue setting and overall dining experience

In the lead up to the award, Executive Chef, Alex Wong, and Food and Beverage Manager, Norliza Mohamad Halid, successfully led their creative teams in ensuring ingredients of the highest quality are sourced to prepare the dishes for a themed dinner, hosted for the members of Chaine Des Rotisseurs’ Kuching Chapter in April 2019.

The dinner, themed ‘Dream’, featured an impeccable array of food, thoughtfully paired with wines from across the world. Some of the courses included:

  • Seafood on the Rocks, a seafood-centric dish with black stone sizzling tiger prawn, lobster, and scallop with court bouillon; paired with Dom Perignon
  • Foie Gras Terrine, marinated with Taylor’s Fine Tawny Port Wine and brandy; paired with Chateau Sadidinet 2010
  • Guéridon Service, Australian Stanbroke Wagyu striploin with grilled mushrooms and Cabernet Sauvignon-infused beef reduction; paired with Pavilion Rouge De Chateau Margaux 2003.
